In Odessa, FL, a different kind of bread is born. Here, only organic flour, water, salt, and a wild sourdough starter touch the dough. No additives. No compromises. Just honest bread, crafted with soul.

The journey began with an old truth, discovered in a sun-dappled village kitchen where the air was rich with the scent of woodsmoke and crusty rye: Real bread isn't made with hands. It's made with time. That simple whisper became the foundational creed.

This principle led to a deep study of traditional breadcraft, including the Caprano method—a centuries-old European approach rooted in hand-fed sourdough and slow fermentation. The lesson learned was clear: Bread isn’t just baked. It’s raised with time, patience, and care.
